Hungry Girl has some of the best tips for lightening up meals. She calls these her "swaps," and let me tell you, some of the desserts are so satisfying and yummy (cake mug, anyone?). Granted, some of her stuff is a little too light and she tends to add some funky ingredients, but oh well.
One of my favorite dessert recipes from her is the Pineapple Upside Down Cake. Um, let's just say it's difficult to not eat the entire cake in one sitting.

Glaze
1 tbsp of butter spray (she calls for light spread, but I just use butter spray because I'm obsessed)
1/4 c. unpacked brown sugar
Cake
Half of a box of yellow cake
1 1/2 tsp baking powder
1/2 cup club soda (um hello, best invention for making cake ever!)
1/4 cup NSA applesauce
7 pineapple rings packed in juice, drained
7 cherries (I omit these because, bleh, cherries)
Directions...
Preheat oven to 350, spray round cake pan with Pam.
Melt butter (or if you're using spray, don't) and combine with brown sugar, mixing well. Crumble this on the bottom of the pan, spreading it evenly.
Combine cake mix with baking powder, then add club soda and applesauce. Mix well.
Spread pineapple (blot first for moisture) evenly along the bottom of the cake pan on top of the sugar mixture. If you're using cherries, add those too.
Pour cake batter on top, pop in the oven for 30-35 minutes and allow cake to cool for 15-20.
Gently flip cake over on to a plate (fits perfectly!).
Cut into 8 slices and enjoy!
Each piece is about 5 WW points or 190 calories.
